I have always been impressed by chefs showing off their skills performing flambe. This time I gathered my courage and took the challenge making this lighter version of beef stroganoff (inspired by Jamie as usual). The steak danced vigorously on a hot smoking pan. To make the scene more dramatic, I poured in a splash of brandy. And straightaway it ignited fierce flames and infused the flavours inside. Not long after that, the aroma in the kitchen intensified as I threw in swiss brown mushrooms (sauteed beforehand), mixed with pickled gherkins, thinly sliced red onion and chopped flat leaves parsley. And finally, it ended with a few table spoons of natural yoghurt and skim milk to tie the flavours together. Served with hot and steaming jasmine rice, it was indeed a simple yet comforting dish to welcome cooler weathers…
